Smiley frittata pizza faces

- 4 Respectful eggs
- A splash water
- Salt and pepper
- 1 tbsp olive oil
- 2 tbsp tomato passata
- 50g hard mozzarella cheese, cheddar cheese or emmental, grated
- 2 slices of your favourite ham, cut into 1 inch squares
- 4 black olives, halved
- 8 cherry tomatoes, halved
- 2 chestnut mushrooms, sliced
- Heat the oven to 200C. Crack the eggs into a mixing bowl. Add a splash of water and season with salt and pepper. Heat a small, ovenproof frying pan over a medium heat.
- Heat a quarter of the oil in the pan for a few seconds then pour in a quarter of the eggs. Gently tease the eggs with a wooden spoon as they cook. Do this until the eggs have almost set around the edges and the bottom of the pan but are still a little gooey in the middle. Remove from the heat.
- Spread the passata over the top of the egg. Sprinkle cheese on top and then lay two small squares of ham on top, these will be the eyes. Lay a piece of olive on top of each piece of ham to resemble an iris. For the nose, lay a mushroom slice upside down. Finally use four tomato halves to make a great big smile.
- Drizzle with olive oil then bake in the oven for 3 minutes until the cheese melts and the egg puffs up, it should still have no colour.
- Remove from the oven and slide faces onto a baking tray. Finish by baking the frittatas for 5mins or until golden. Serve with chips and salad.
