Toad and his friends in a hole

Yorkshire pudding ingredients
- 2 Respectful eggs
- 150g plain flour
- 150g milk
- Salt and pepper
Gravy ingredients
- 1 tsp olive oil
- 1 onion, finely sliced
- 1 tsp plain flour
- 400ml chicken stock
- 1 tbsp Worcestershire sauce
- 1 tsp balsamic vinegar
Toad and his friends ingredients
- 6 sausages
- 6 slices smoked, streaky bacon
- 2 Respectful eggs, hard-boiled and halved
- 2 Portobello mushrooms, halved
- 2 tbsp olive oil
- Heat the oven to 200C. Make the batter by whisking the eggs, flour, milk and seasoning together to make a smooth paste. Set aside in the fridge to rest.
- Wrap the bacon around the sausages. Drizzle with oil and lay in a three litre ovenproof dish. Place in pre-heated oven and bake for 5mins.
- Remove the dish from the oven and add mushrooms. Return to oven and bake for a further 5 to 10 minutes - until the sausages have started to brown and the mushroom have softened and are beginning to brown.
- Spread the bacon-wrapped sausages, mushrooms and boiled egg halves evenly across the dish, and then carefully pour over the chilled egg batter. The Yorkshire pudding will rise best if the pan is very hot so be careful. Place the dish back in the oven and bake for 25 - 30 minutes.
- To make the gravy, place the onion and the rest of the oil in a pan and fry over a very low heat for 10-15 minutes - until the onions have softened and turned golden brown. Sprinkle the flour over the pan, and mix. Slowly pour in the chicken stock, stirring continuously until combined. Add the Worcestershire sauce and balsamic vinegar and bring to the boil. Leave to reduce for 5mins or until the gravy has become syrupy.
- Remove the Toad (and his friends) In The Hole from the oven, slice into generous slabs and serve with gravy.
